Today we recommend a fresh and wonderfully tasty Asian chicken dish that is perfect for lunch and dinner. It is filled with vegetables in different colors and contains a mixture of fiber, fat, protein and slow carbohydrates.
The recipe can be varied endlessly based on your preferences and the season. If you have, for example, problems with blood sugar or PCOS, you can reduce or exclude mangoes and black rice, alternatively eat them last in the meal to reduce the effect on blood sugar .
Ingredients:
Chicken
Red/black rice
Vegetables
Red cabbage
Carrot
Mango
Avocado
Cucumber
Pepper
Marinade for chicken (about 2 portions)
5 tbsp tamari soy
2 tsp grated ginger
1/2 squeezed lime
1 tsp sesame oil
1 teaspoon sambal
Dressing (about 2 portions)
2 tbsp peanut butter or other nut butter/tahini
1/2 squeezed lime
1 tbsp tamari soy
1 teaspoon sambal
Water to balance the sauce to a creamy consistency
Do this:
Cook the rice according to instructions. Make the chicken marinade in a small bowl. Slice the chicken and fry with butter in a pan. Add the marinade over the chicken until it gets a little surface and is cooked through. Slice up the vegetables and salad. Mix the nut dressing in a small bowl (add water and stir until it gets a creamy consistency, add more liquid if it gets too thick. It will naturally curdle at first so just stir, stir and stir). When the rice is ready, put all the vegetables and the chicken on a plate and drizzle the dressing over it.
A tip is to fry broccoli and cabbage in the chicken marinade.
