Recipe for saffron bread
Dry ingredients
2 dl oatmeal
2 dl almond flour
0.5 tbsp fiber husk
1 tsp baking powder
1 packet of saffron
About 1.5-2 seasoning measures of salt

Wet ingredients
3 large yellow-brown bananas
1/2 cup coconut oil
2 eggs
Raisins to taste

Do this:
Set the oven to 175 degrees. Mix all ingredients together with a hand mixer. If you have a loaf pan that needs to be greased, grease with coconut oil. Pour the batter into the mold, press down the raisins lightly and top with coconut. Bake in the oven for about 40 minutes depending on the oven. Test with a needle to see if it is ready. Store sealed in the refrigerator for best shelf life or freeze slices.

For soft gingerbread do exactly as above but replace the saffron with 1-2 tbsp of gingerbread spice depending on how much flavor you want and omit the raisins.
