BANANA BREAD with saffron - without sugar, gluten and flour

godaste receptet på bananbröd

Looking for the best banana bread? Here you have a recipe for the world's easiest and tastiest saffron banana bread, which is also sugar-free, gluten-free and dairy-free! It's soft, juicy, sweet and tastes like fluff bun. In addition, it is packed with nutrition and is a hit with young and old alike. Best of all, it's ready in less than ten minutes, then the oven does the rest.

Magic bread with the taste of saffron

Tip for those who have PCOS or problems with insulin sensitivity is to use bananas on the greener side to keep blood sugar at an even level. It is also possible to replace oatmeal with, for example, extra almond flour or coconut flakes if you prefer (then you need to keep it in the oven longer). A simple trick we also love is to take a tablespoon of vinegar mixed with water before we eat something so that it doesn't have the same effect on blood sugar. In the following blog post, you can read more about vinegar's effect on blood sugar .

Recipe for saffron bread
Dry ingredients
2 dl oatmeal
2 dl almond flour
0.5 tbsp fiber husk
1 tsp baking powder
1 packet of saffron
About 1.5-2 seasoning measures of salt

Wet ingredients
3 large yellow-brown bananas
1/2 cup coconut oil
2 eggs
Raisins to taste

Do this:
Set the oven to 175 degrees. Mix all ingredients together with a hand mixer. If you have a loaf pan that needs to be greased, grease with coconut oil. Pour the batter into the mold, press down the raisins lightly and top with coconut. Bake in the oven for about 40 minutes depending on the oven. Test with a needle to see if it is ready. Store sealed in the refrigerator for best shelf life or freeze slices.

For soft gingerbread do exactly as above but replace the saffron with 1-2 tbsp of gingerbread spice depending on how much flavor you want and omit the raisins.
