The world's best FISH STEW with saffron

Today we share a recipe for the world's tastiest and easiest fish stew. It is the perfect stew now for autumn. It is just as suitable as an everyday dish as it is for a more luxurious dinner. It is also completely gluten-free, sugar-free and can be made dairy-free if you wish by using coconut milk as a base instead of cream.

The pot that creates magic

Imagine a warming stew with flavors like saffron and coconut milk - we've got it. It is packed with nutrition and contains a mix of fat, protein and carbohydrates that balance your hormones . For example, if you have PCOS , you can exclude potatoes and instead take root vegetables or fill up with more protein by adding more fish and shellfish! If you eat more LCHF or keto, the base can be made with coconut milk or coconut cream, where you then replace root vegetables and potatoes with, for example, cauliflower and broccoli.

We love adding saffron for an extra boost and great flavor. Did you know that saffron has been shown to affect our well-being by reducing anxiety and worry? Win-win for taste and effect! If you don't like saffron, it works just as well without it. We usually serve the stew together with home-baked seed cakes.

Recipe for this magical saffron fish stew:
500 g fish of your choice (e.g. salmon and cod)
2 parsnips
2 carrots
3 potatoes (can be excluded in case of, for example, PCOS)
1 fennel
½ leek
½ hg fresh dill
2 cloves of garlic

Liquid:
7 dl of water
2 dl coconut milk/cream of your choice
½ dl lobster stock
1 dl white wine (usually exclude this)

Spices:
1 vegetable broth
1 bag of saffron
Salt, pepper, cayenne pepper
Shrimp to top with

Do this:
Cut the vegetables into pieces and put them in a saucepan. Wait to add the leeks and dill. Then pour in water, stock cube, saffron, wine and stock. Boil and reduce the heat slightly, then let it simmer for about 15-20 minutes. Cut the fish into pieces and add them to the soup together with cream, leeks and dill. Let everything boil for another 10 min. Season with salt, pepper and cayenne pepper and finally add in the prawns. Eat & enjoy!
