A wonderful and super simple salmon stir-fry that fits perfectly on the Easter table, Midsummer table and Christmas table, or why not as a breakfast stir-fry on a good sandwich? It contains high-quality protein and the omega-3 fats our bodies love. We use Womensyncs Boost Bread as a carrier of the salmon mixture.
A salmon stir-fry perfect for the sandwich table
Ingredients (for about 8 slices):
2 salmon fillets
1 cup Greek yogurt
2 large "leaves" of kale
1 medium red onion
½ lemon
Spices:
Garlic powder
Salt
Pepper
Fresh dill
Do this:
Fry the salmon in butter and "mash" so that it becomes like mince. Season with salt, pepper and garlic powder. Chop red onion and kale into small pieces. Grate the lemon zest from the peel of the lemon and prepare some slices of lemon for decoration. Mix the fried salmon with Greek yogurt, chopped red onion and kale. Add the lemon zest and season to desired taste.
Serve the mixture on Boost Bread or other bread of your choice and top with lemon wedges and dill.
