Fried rice with chicken, vegetables and eggs - a wonderful and simple everyday dish that can be varied endlessly depending on what you like. The meal contains a blend of high quality fats from real butter/ghee and eggs. Complete protein from chicken and eggs. Fiber and slow carbohydrates from brown rice and vegetables. As the icing on the cake, it is filled with anti-inflammatory spices from ginger, curry and turmeric. A meal that contains building blocks for your hormones to function optimally.
Simple recipe for fried rice
This is a favorite of ours when we run out of lunch and dinner ideas. You can vary the recipe based on the season and your preferences. For example, if you have PCOS , it's fine to replace the rice with cauliflower rice or something else you like!
For 3-4 servings you need:
Brown rice for 4 portions
1 fresh broccoli
1 yellow onion
1-2 cloves of garlic
3 cm grated ginger
500g chicken (minced beef also works well)
2 tsp sesame oil
1 tbsp fish sauce
1 tbsp fish oil
1 tsp red curry paste
Spices such as: Cayenne pepper, onion powder, salt and pepper.
Do this: Cook the rice according to the instructions. Saute onion, garlic and ginger in butter/ghee and then fry the chicken until done. Add the vegetables and season. When the rice is cooked, mix it together with the chicken and vegetables and taste and see if something is desired for you. Fry the eggs so they get a crispy underside. Serve and top with chopped green onions and nuts for extra crunch!
