You need:
8 fresh pitted dates (can be reduced for a smaller effect on blood sugar)
3 eggs
75 g melted real butter (alternatively 0.5 dl melted coconut oil)
2 dl almond flour
1 tsp baking powder
1.2 tsp vanilla powder
1.5 tsp cardamom
0.25 tsp salt
Do this:
Heat the oven to 175 degrees. Core the dates and mix together with the rest of the ingredients to a smooth batter. Grease a mold with coconut oil and pour in the batter. Bake in the oven for about 8-12 minutes, depending on the oven and form. We had 14 minutes as we used a SMALL mold. If you have a larger "regular" form, you have it in for a shorter time. It is ready when the cake is firm at the edges and sticky in the middle (it will harden after it has been left out for a while). Top with chopped almonds and powdered icing sugar. Eat and enjoy!
