This is one of our most saved recipes on women.sync instagram . It is filled with high-quality fats from eggs, almond flour and real butter, which balances out the sugar from the dates.
If you have PCOS, a tip is to reduce the number of dates, the taste will still be wonderful but not as sweet. Another tip is to eat it together with whipped cream or as a dessert as it does not have the same effect on blood sugar .
8 fresh pitted dates (can be reduced for a smaller effect on blood sugar)
75 g melted real butter (alternatively 0.5 dl melted coconut oil)
2 dl almond flour
1 tsp baking powder
1.2 tsp vanilla powder
1.5 tsp cardamom
0.25 tsp salt
Heat the oven to 175 degrees. Core the dates and mix together with the rest of the ingredients to a smooth batter. Grease a mold with coconut oil and pour in the batter. Bake in the oven for about 8-12 minutes, depending on the oven and form. We had 14 minutes as we used a SMALL mold. If you have a larger "regular" form, you have it in for a shorter time. It is ready when the cake is firm at the edges and sticky in the middle (it will harden after it has been left out for a while). Top with chopped almonds and powdered icing sugar. Eat and enjoy!
We have also tried to make a double batch and it turned out as good as could be! If you make a double batch, it will fit in a larger "regular" cookie cutter.
