Gluten-free and nutritious HERB BREAD

Boostbread is one of our favorite breads in the more moderate direction. In the book , we have three different variants depending on cravings, appetite and where you are in your menstrual cycle . Today we share a Christmas variant that is perfect on the Christmas table. Goes home with big and small.

The bread that makes your taste buds rejoice

It keeps you full, is full of healthy fats , eggs for vitamin A, selenium and iodine for thyroid support and pumpkin seeds for iron – it's simply designed to set you up for a balanced menstrual cycle . It's juicy, crunchy with sweetness from the fig and a touch of carrot. It is also gluten-free, dairy-free and without white processed sugar.

Preparations :
To absorb the nutrition in the nuts and seeds in the best way, feel free to soak them first.

You need
Dry ingredients

2 dl buckwheat flour
3 dl oatmeal/buckwheat groats for gluten-free
2 dl pumpkin seeds
2 dl chopped brazil nuts
0.5 dl flaxseeds
0.5 dl raisins + 2 chopped dried figs
1 tablespoon chia seeds
1.5 tbsp fiber husk
1.5 tsp baking powder
0.5 tsp iodized sea salt
0.5 bag of herbs and spices

Wet ingredients
2 eggs
3 dl unsweetened almond milk
2 tablespoons melted neutral coconut oil
1.5 tablespoons Swedish liquid honey
1 medium-sized coarsely grated carrot

Topping
Pumpkin seeds

Do this :
Heat the oven to 200 degrees. Chop the nuts and mix with the other dry ingredients. Add almond milk, egg, coconut oil, honey, grated carrot and mix together. If you have a loaf pan that needs to be greased, grease with coconut oil. Pour the batter into the mold, sprinkle pumpkin seeds over it and press them down slightly with a wet spoon. Bake in the middle of the oven for about 50 minutes. Test the bread with a stick, it should not be sticky. If you tap the bread, it should have a crunch. Then let the bread cool under a baking sheet before slicing it. Store sealed in the refrigerator for best shelf life or freeze slices for the next cycle.
