One of our favorite meals when inspiration strikes. This recipe is nutritious, simple and can be made in no time. It is also divinely good at the same time as it contains all the building blocks you need for a menstrual cycle and hormones in balance.
A simple recipe that can be varied endlessly depending on the craving and phase. It is just as well to replace the salmon with another protein source or to vary the vegetables according to the season. A magical Asian salmon with a divine lime and ginger rice and fried cabbage and broccoli and avocado.
If you have problems with your blood sugar, it is just as well to exclude rice and instead fry extra white cabbage and broccoli.
Recipe for about 2 people:
2 salmon fillets
1/2 broccoli
2 handfuls of white cabbage
1 avocado
Rice
Boiled jasmine rice/any rice (cook according to instructions)
2 tbsp grated ginger
1 lime
Soy sauce
5 tbsp tamari soy
2-3 tsp sesame oil
1-2 tbsp sweet chili sauce
Condiments such as: salt and chili flakes
Do this:
Start by cooking rice according to directions. Add about 1 tablespoon of grated ginger and a squeezed half of a lime to the rice during cooking. Turn on the oven at 150-175 degrees. Mix soy, sesame oil, sweet chili sauce and the rest of the ginger and lime into a dressing. Pour about half of the dressing over the salmon and put in the oven for about 15-20 minutes until the salmon is ready.
At the same time, fry shredded white cabbage and broccoli in butter, real butter/coconut oil and salt. When they start to soften, pour on the rest of the marinade. Serve together with the salmon and rice and a creamy avocado topped with flake salt and chili flakes.
