Warming CHICKEN STEW with coconut milk, curry and broccoli - perfect for winter

A favorite everyday dish with us is this warming chicken stew with coconut milk and curry. It's simple, quick to make and so good. It is also packed with nutrition, high-quality fats and warming spices that raise the energy within us.

It is also completely gluten-free, dairy-free and sugar-free.

You need:
Brown rice, wild rice, black rice or cauliflower rice
about 500 g of chicken
1 broccoli
1 golden onion
1 clove of garlic
3 cm ginger
2 handfuls of fresh spinach
500 g coconut milk
2 tsp tomato puree
Butter to fry in

1 tsp turmeric
1 tsp garlic powder
1 tsp cumin
1 teaspoon dried coriander
1 teaspoon curry
0.5 tsp cayenne pepper
0.5 tsp cinnamon
0.5 tsp cardamom
1 tsp sambal oelek
1 vegetable broth

Do this:
Cook the rice according to the instructions. Then slice the chicken into smaller pieces and fry in butter until it gets a little colour. Chop onion, garlic and broccoli and grate ginger and pour in. Then add coconut milk, tomato puree, broth and spices. Let it boil under the lid for about 15 minutes (until the chicken is ready). Finish by mixing in fresh spinach and serve with rice or whatever you like.
