Chevre salad with extra everything
Today's recipe is a real hit this summer. It contains, among other things, quinoa, goat cheese, strawberries, walnuts and a magical sweet-strong honey dressing. The salad works perfectly as a side dish to grilled chicken, salmon or any other protein source that you prefer!
For the base you need:Quinoa (cooked in broth is much tastier and has a lovely saltiness)
Strawberries
Goat cheese
Arugula
Nuts + seeds
Do this:
Cook the quinoa according to directions + broth for extra flavor! Put arugula on a plate and top with the cooked quinoa, slice strawberries and goat cheese and place on top. Top with walnuts and dressing!
Dressing (for about 2 servings)
1.5 tbsp honey
1.5 tbsp sweet strong mustard/ Dijon mustard
3 tbsp olive oil
1 tsp apple cider vinegar
Mix all ingredients together and serve!
