This is an Asian bowl that can never go wrong. It contains a mixture of white cabbage, carrot, ginger, broccoli, chicken, cashews and eggs, all mixed with a wonderful Asian dressing. This is a meal where you get a mix of high-quality fats, complete protein and fiber that will send your blood sugar into overdrive.
PCOS friendly recipe
This is a recipe that is perfect for those with PCOS or problems with insulin sensitivity as it is high in fiber, protein and fat. Simply adapt the recipe based on your conditions and preferences. If you feel that you need to add rice instead of white cabbage as a base, replace it. It is great to make the recipe with e.g. cauliflower rice, zucchini noodles or rice of your choice and to use your favorite vegetables.
What you need:
4 large handfuls of shredded cabbage
1 carrot
2 kale leaves
1/2 yellow onion
1 clove of garlic
3 cm ginger
1/2 broccoli
Chicken/minced beef/salmon/shrimp
2 eggs
Butter/ghee for frying
Chopped nuts
Seasonings such as 2 teaspoons tamari soy, 1 teaspoon fish sauce, 1/2 teaspoon honey, chili flakes, sea salt, pepper, garlic powder, and cayenne pepper.
Make it like this: Fry chicken and season with garlic powder, cayenne pepper, salt, chili flakes and a little honey. Shred the vegetables. Saute the onion in butter, then add the rest of the vegetables (grating the ginger). Season with soy, fish sauce, salt, pepper, garlic powder & chili. Allow to fry until softened (but still a bit crisp) Mix the vegetables with the chicken/minced beef. Then fry the eggs. Top with the egg and chopped nuts on top.
