Sweet scrambled eggs WITH BANANA

If you need breakfast inspiration for a sweeter breakfast that keeps your blood sugar and hormones stable while still getting enough fat and protein, this sweet scrambled egg is absolutely magical. Imagine a combination of scrambled eggs and banana pancakes boosted with extra good fats and protein. You must try!

For example, if you have PCOS, you can exclude the banana or take a greener banana that contains resistant starch (dietary fiber) which therefore does not affect blood sugar to the same extent as a ripe banana.

You need:
2-3 organic eggs⁠
1 dl coconut milk ⁠
0.5 banana⁠
1 tablespoon of collagen⁠
1 tbsp butter⁠

Do this: ⁠
Mix eggs, coconut milk and banana. Heat butter in the frying pan. Pour in the egg mixture and let set while stirring on low heat until the egg mixture becomes soft and creamy. Add cinnamon and cardamom. Remove from the heat and fold in the collagen. ⁠

Berries like blueberries or raspberries, a dollop of Turkish, Greek or coconut yogurt topped with nuts and seeds.
