Recipe shakshuka with mozzarella and saffron
A meal where you get a mixture of high-quality fats from eggs, mozzarella and avocado. Complete protein from eggs and mozzarella. Complex carbohydrates from quinoa. Add to that a real boost with spices from tomato, ginger, turmeric and saffron.
1 yellow onion
2 dl pureed tomatoes
1 teaspoon honey
1 packet of buffalo mozzarella
Spices such as: garlic powder, herb salt, black pepper, ginger, turmeric and saffron.
Cook quinoa according to package directions. Chop and fry the onion until it softens together with the spices. Season to your own desired taste. Add the passed tomatoes and let it simmer for about 5 minutes. Hatch the desired number of eggs in the tomato sauce. Cut the mozzarella into pieces or slices and add to the tomato sauce around the eggs.
Place a lid on and simmer on medium heat until the eggs look ready. Serve with quinoa and top with avocado and fresh coriander for an extra boost.
