Several of you have requested a vegetarian recipe that is suitable for the entire menstrual cycle. This vegetarian bean stew is incredibly tasty and contains several spices and herbs rich in vitamins, minerals and antioxidants. It contains protein, fiber and carbohydrates from black beans and fat from avocado.
Beans in themselves are not a complete protein, but combined with a grain (eg black rice) it becomes a complete protein source. If you want to add animal protein, it is great to serve with a boiled egg.
Recipe for 3-4 people
2 pkt black beans
2 packs of crushed tomatoes
1-2 red onions
1-2 peppers
2 tbsp tamari soy
2 tbsp red wine vinegar
1 teaspoon chipotle seasoning
1 tsp paprika spice
2 tsp cumin
2 teaspoons of cocoa
Salt
Topping
2 avocados
1 pot coriander
2 limes
Instructions
Fry the red onion until it starts to soften. Pour in red wine vinegar and let it soak in for a few minutes. Stir. Pour in tamari. Simmer for another minute and then chop up the paprika. Put in the paprika and stir. Then put in all the spices. Pour in crushed tomatoes. Let simmer for about 5 minutes. Drain and add the black beans and simmer for another 5 minutes. Arrange on plates and top with avocado, coriander and squeezed lime juice. It is also perfect to serve with black rice.
