This recipe is a real highlight that works both as an everyday dish and for finer occasions. A tasty Thai stew that is easy to make!
Ingredients:
1 kg of chicken
1/2 broccoli head
1-2 red onions
1 dl pitted green olives
1-2 cloves of garlic
2-3 tbsp red curry paste
1 tablespoon curry
1 tsp salt
1 jalapeno pepper, fresh or canned
5 dl creme fraiche
2 dl of water
Fresh parsley
Do this:
Cut the chicken fillets into rough pieces. Place them in a pot or large frying pan. When the chicken liquid is gone, add ghee or coconut oil and fry the chicken pieces for 10-15 minutes. Season with salt and curry in the meantime. Shred the red onion into larger pieces, finely chop the garlic and add in. Let the red onion soften a little. Pour in water and crème fraîche. Let the pot boil for a few minutes and then add the jalapeno pepper and olives. Taste if more spices are needed. Chop parsley and sprinkle over before serving. Serve with rice, cauliflower rice and a good salad.
