SUMMER shrimp and scrambled eggs

A fantastically good prawn and egg scramble with the taste of dill, lemon and turmeric. This mess is perfect to serve at the midsummer table or on a lovely summer day together with boiled potatoes, on a sandwich or with baked potatoes.

Shrimp and scrambled eggs

The mixture contains good fat and protein from shrimp, eggs and creme fraiche and has a very small effect on blood sugar. We love to throw in some turmeric because it's a great spice with anti-inflammatory properties.

Ingredients for about 2 people

1 can peeled shrimp
2 boiled eggs
1.5 dl creme fraiche
1/2 yellow onion
The juice from 1/2 lemon
Dill
Salt and pepper

Do this:

Start by boiling the eggs for about 8-10 minutes to get hard-boiled eggs. Then chop the yellow onion into small pieces and mix together with creme fraiche, lemon juice, dill and prawns. Rinse the eggs and let them cool slightly. Then peel the eggs, chop into small pieces and mix with the rest of the mixture. Add salt and pepper to taste.
