This feta cheese and watermelon salad is fantastically good and perfect to enjoy during the summer months. Unlike the classic version, we've added good sources of fat from avocado, olive oil, feta cheese and sunflower seeds to help balance blood sugar. As well as complex carbohydrates from the quinoa and complete protein from chicken. It also contains loads of nutrition from herbs, fiber from vegetables and apple cider vinegar which supports digestion and blood sugar.
Recipe for about 2 servings:
4 handfuls of spinach
2 dl cooked quinoa
Watermelon
1 Cucumber
1 Avocado
1/2 red onion
1 feta cheese
Some sunflower seeds
Vinaigrette:
4 tbsp olive oil
3 tbsp apple cider vinegar
1/2 pot of mint
1/2 pot parsley
1 pot of basil (for both the dressing and the salad)
Salt
Pepper
300 g fried or grilled chicken
Thyme
Do this:
Start by making the vinaigrette by mixing all the ingredients using an immersion blender or blender.
Mix all the ingredients for the salad in a large bowl and mix with the dressing. Fry or grill the chicken until cooked through (pre-grilled chicken also works well).
Place the salad and chicken in two deep plates and enjoy!
