Need dinner inspiration that's light and tasty while giving your body what it needs? Today we share one of our favorite recipes this fall. A warming chili con carne with kidney beans and rice. This is a meal that contains a mix of protein, fat and carbohydrates = perfect for your hormones and menstrual cycle.
Recipe for chili con carne
The recipe is quick and super simple. A warming and grounding chili con carne that is suitable for both young and old. The recipe is for about 3-4 portions and can be varied based on what you like! For example, if you have diabetes or PCOS, it's great to replace the rice with more beans or why not fried kale and broccoli on the side?
You will need the following:
approx. 500 g of organic ground beef
400 g whole canned tomatoes / crushed tomatoes
1 packet of kidney beans
1 golden onion
2 cloves of garlic
1 vegetable broth
2 tsp tomato paste
2 tsp sambal alt. chili to taste
2 tsp garlic powder
1 tsp cayenne pepper
Salt & pepper
Raw rice/ wild rice/ black rice
Real butter for frying
Start by cooking the rice according to the instructions, we cooked the rice with broth for extra good taste. Then chop the onion and fry with butter in a pot. Pour the ground beef into the pot and grate the carrot in the meantime. When the mince is cooked through, add the tomatoes, carrot, broth and spices. Let simmer for 10 minutes and finish by pouring in the kidney beans. Taste and serve with the rice <3
